Outrageous Triple Chocolate Brownies

INGREDIENTS:

1 pound butter

16oz. dark chocolate chips

6 ounces unsweetened chocolate squares

6 extra-large eggs

3 tablespoons instant coffee granules

2 tablespoons pure vanilla extract

2 1/4 cups sugar

1 1/4 cups all-purpose flour (reserve the 1/4c. to toss with chips and walnuts)

1 tablespoon baking powder

1 teaspoon salt

2 cups chopped walnuts (optional)

6oz. ounces semisweet chocolate chips plus 6oz. dark chocolate chips

 

DIRECTIONS:

1. Preheat oven to 350 degrees F.

2. Grease and flour a 12 x 18 x 1-inch baking sheet.

3. In a double boiler (or in medium bowl over simmering water), melt together the butter, 16oz.dark

chocolate chips and the 6oz.unsweetened chocolate squares. Cool slightly.

4. In a large mixing bowl, gently beat together the eggs, coffee granules, vanilla, and sugar.

5. Stir the warm chocolate mixture into the egg mixture and allow to cool to room temperature.

6. In a mixing bowl, sift together 1 cup of flour, the baking powder, and salt.

7. Add to the cooled chocolate mixture and mix on medium speed until well blended. Do not over-beat.

8. Toss the walnuts and 6oz. each of the semisweet and dark chocolate chips in a medium bowl with

reserved 1/4 cup of flour.

9. Stir chips and walnuts into the batter and pour into the baking pan.

10. Bake for approximately 25 minutes or until a toothpick comes out clean. Do not over-bake!

11. Cool completely.

12. Frost with Chocolate Ganache.

13. Refrigerate and cut into 20 large squares.

 

Chocolate Ganache

16oz. dark chocolate chips

¾ cup heavy cream (real whipping cream)

2 heaping tsp. instant coffee granules (Cut in half if you prefer less coffee flavor.)

Chopped walnuts (optional)

Place chips in a medium bowl. While stirring constantly, heat heavy cream and instant coffee granules

until mixture reaches a simmer. Remove from heat and immediately pour the cream mixture over the

dark chocolate chips. Whisk until smooth and glossy. Allow to cool just to room temperature. Spread over

the brownies. Garnish with chopped walnuts if desired.
